Shredded leftover smoked chicken, greek yogurt, mayonnaise, lemon juice, mustard sauce, Worcestershire sauce, white wine vinegar, chopped jalapenos, chopped celery, finely diced onion, salt and pepper to taste.

Directions

  1. Take a large mixing bowl and combine all the ingredients.
  2. Add the shredded chicken and toss the chicken with the salad base.

Ingredients Required

For the dough: All-purpose flour, dry yeast, sugar, salt, extra virgin olive oil, and lukewarm water.

For the pizza sauce: tomatoes, chili flakes, butter, garlic, red chili powder, sugar, oil, oregano, salt, and pepper to taste.

For the topping: Grated mozzarella cheese, shredded leftover smoked chicken, sliced paprika and olives, and choices of vegetables such as onion, bell peppers, mushroom, tomato, etc.

Directions

  1. To make pizza dough, combine all-purpose flour, yeast, sugar, salt, and oil and gently massage all the ingredients with your palm. Slowly add lukewarm water and combine to form a dough. Punch the dough down a few times. Knead the pizza dough until it is smooth and elastic. Give a round shape to the ball, drizzle some oil, and let it rest for about an hour.
  2. Use a readymade pizza sauce or prepare a homemade one by simmering roasted, skinless tomatoes and all the other ingredients for the sauce. Once fully cooked and reduced, transfer to a mixer and grind to form a smooth, thick paste.
  3. Use a rolling pin to flatten the dough and make about an 8 to 10” size pizza base.
  4. Spread a layer of pizza sauce and use your choice of toppings. Finish off by sprinkling some grated mozzarella cheese and salt, pepper, oregano, and chili flakes for seasoning.
  5. Bake the pizza at about 600℉ (or 315℃) in a wood-burning oven for about 4 minutes. You can also use the convection setting of your microwave and bake the pizza at high heat for about 15 minutes until the cheese melts and you get a nice, lightly browned crust.

Chicken Fried Rice

Transform boring rice into smoked chicken fried rice by using some simple ingredients. The key to bringing flavors to the fried rice is using the right amount of soya sauce, vinegar, and salt. It can be either had as an all-in-one meal, or you can pair it up with Chilly Chicken, Manchurian Chicken, or other Chinese sides.

Ingredients Required

80% cooked rice, shredded smoked chicken, chopped onion and garlic, soy sauce, eggs, diced red and green bell pepper, carrot, spring onion, salt, and pepper to taste.

Directions

  1. In a hot wok or pan, spray some oil and make scrambled eggs. Keep the eggs aside.
  2. Again, spread some oil on the pan and add garlic, onion, and chopped chilies and stir until golden brown. Add the remaining vegetables and vinegar and stir fry for a minute or two. To bring an umami taste to the fried rice, you can also add some diced bacon.
  3. Next, add the soya sauce, rice, and pepper, and stir fry for about a minute.

Pepper Stir Fry Smoked Chicken

Ingredients Required

Diced smoked chicken, diced red, yellow, and green bell peppers, diced onions, finely chopped ginger and garlic, oyster sauce, soya sauce, vinegar, toasted sesame seeds, pepper, and salt to taste.

Directions

  1. Coat some oil in a hot wok and add chopped ginger and garlic. Toss until it becomes golden brown. Use high flame for the entire recipe.
